How To Make Ayam Goreng Berempah

1- Marinating the chicken

  • Make long strips out of the chicken thighs.
  • Remove the lemongrass’s darker green leaves from the top and slice the remainder into smaller pieces. This allows them to be combined in the food processor.
  • To combine in the food processor, chop the red onions into smaller pieces.
  • Squish the garlic cloves with the side of a knife.
  • Blend the ginger, red onions, shallots, garlic, lemongrass, red bird’s eye chillies, chilli paste, coriander seeds, curry powder, cumin, salt, and sugar in a food processor.
  • Crack the egg into the blender while it is still mixing.
  • Place the chicken strips in a mixing dish and add the combined paste.
  • Make sure the chicken is evenly covered with the paste.
  • Marinate the chicken in the fridge for at least 2 – 3 hours, or overnight if you have time. To keep the chicken from drying out in the refrigerator, wrap it with plastic wrap.

2- Fry the chicken

  • In a pan, heat 400ml of oil.
  • Mix in the corn flour with the marinated chicken.
  • Deep fried the chicken in hot oil until it gets deep brown.
  • To absorb the excess oil, drain the chicken on a paper towel.
  • In the same pan, fry the remaining spice mixture from the chicken.
  • Drain the fried spices and spoon them on top of the chicken when it’s a deep brown. Your Ayam Goreng Berempah is ready to be served.
